Ingredients

  1. 400g white fish fillets
  2. 1L water
  3. 3 tbsp sour curry paste
  4. 2 cups mixed vegetables (papaya, cauliflower, morning glory)
  5. 2 tbsp tamarind paste

Seasoning

  1. 2 tbsp fish sauce
  2. 1 tbsp palm sugar
  3. 1 tsp salt

Instructions

  1. 1. Boil Water
    5-7 minutes
    • Bring water to a boil in a pot.
  2. 2. Dissolve Paste
    1-2 minutes
    • Dissolve sour curry paste into the water.
  3. 3. Simmer Firm Vegetables
    5 minutes
    • Add firmer vegetables first, simmer 5 minutes.
  4. 4. Add Fish & Vegetables
    2 minutes
    • Add fish and remaining vegetables.
  5. 5. Season
    1-2 minutes
    • Season with tamarind, fish sauce, palm sugar, and salt.
  6. 6. Simmer & Serve
    5-7 minutes
    • Simmer until fish is cooked through. Serve hot with rice.
